Abdominal wounds tend to be serious simply due to the amount of important organs in that area. Without quick medical attention (more than a first aid kit), she would die. It would just take longer for her to die than, say, a gunshot wound to the chest.
Brainwasher is right. Joel did try to push her out of the way, but it didn't do any good, and he was wounded as well, just not as severely.
Joel could not have blocked the bullets with his body. 5.56 NATO rounds have enough power to go through at least one target at that range. If Joel had tried, that would have been 2 dead instead of 1.

Who is to say Joel didn't? He didn't exactly have much time to react to be shot at, him turning and taking the bullets was the most he could do in the moment but, as M67PattonZippo explained, the bullets would have gone through him anyway.
How? He was unarmed and exhausted. There really was nothing he could have done to save her. Fighting back would have only led to his death, and likely Sarah would have died just the same.

I agree! All he could do was either turn around (which he did) or charge the guy, which would have guaranteed his and Sarah's death.
If you were Sarah's daughter, you wouldn't be born yet ;)
